Στην ορεινή αμπελουργική ζώνη της Ζίτσας στην Ήπειρο, το κλίμα το έδαφος και ο ανθρώπινος παράγοντας διαμορφώνουν ένα ιδιαίτερο terroir. Η εξέλιξη στον χρόνο αναδεικνύει τη δυναμική των γηγενών λευκών και ερυθρών ποικιλιών.
Από τη δημιουργία του οινοποιείου το 1974, τη σύσταση της ZOINOS WINERY το 2006 έως σήμερα ο σκοπός είναι πάντα ο ίδιος, ο ποιοτικός αμπελώνας.
Κάθε κρασί έχει το δικό του χαρακτήρα όπου εκφράζει την ποικιλία αλλά και την περιοχή. Στους οίνους που προέρχονται από τις γηγενείς ποικιλίες επιλέγονται άγριες ζύμες ώστε να ιδιαιτεροποιηθεί κάθε κρασί και μέσα από αυτό η δυναμική όχι μόνο της ποικιλίας αλλά και του οικοσυστήματος μιας και κάθε κρασί παράγεται από συγκεκριμένα αμπελοτόπια.
Εδώ η παραγωγή αφρωδών (λευκών και ροζέ ) οίνων είναι παράδοση καθώς και ο κεχριμπαρί οίνος από τη λευκή ποικιλία Ντεμπίνα με την μέθοδο της ερυθρής οινοποίησης όπου αναδεικνύεται η δυναμική της ποικιλίας.
Η κλιματική αλλαγή φαίνεται να έχει επηρεάσει θετικά την ορεινή αμπελουργική ζώνη της Ζίτσας. Η μεγαλύτερη ηλιοφάνεια κατά τους χειμερινούς μήνες, οι υψηλότερες θερμοκρασίες κατά τον Σεπτέμβριο - Οκτώβριο, δίνουν μια προήμηση στις ποικιλίες, καλύτερη ωρίμανση και την απουσία ασθενειών που ταλαιπωρούσαν την ζώνη τα προηγούμενα χρόνια.
Την τελευταία δεκαετία το οινοποιείο και το αποστακτήριο έχουν εκσυγχρονιστεί και είναι επισκέψιμα. Η ZOINOS WINERY έχει στην κατοχή της 130 στρέμματα ιδιόκτητους αμπελώνες βιολογικής καλλιέργειας με τις γηγενείς ποικιλίες.
Σε ερευνητικό επίπεδο η εταιρεία τρέχει τρία προγράμματα, τα δύο έχουν να κάνουν με την καταγραφή, μελέτη και παραγωγή φυτικού πολλαπλασιαστικού υλικού από ποικιλίες ηπειρώτικες, ενώ γίνονται πειραματικές οινοποιήσεις (καταγραφή ποικιλιών, οινικά χαρακτηριστικά και μελέτη αυτών και το τρίτο με την ιχνηλασιμότητα των προϊόντων.
ΠΟΙΚΙΛΙΕΣ «ΘΗΣΑΥΡΟΣ»
Η αμπελοκαλλιέργεια στην Ήπειρο και ιδιαίτερα στην Ζίτσα έχει μακρά ιστορία, με τα κρασιά της να χαίρουν φήμης από παλιά, καθώς στην αμπελουργική ζώνη της καλλιεργούνται τρεις ενδημικές ποικιλίες, η λευκή Ντεμπίνα και οι ερυθρές Βλάχικο και Μπεκάρι.
Το υψόμετρο είναι 700μ. από τη θάλασσα και τα εδάφη είναι ασβεστολιθικά και επικλινή, στραμμένα προς την μεριά του Ιονίου και δέχονται την επίδραση των θαλάσσιων ανέμων, έχοντας έναν ήπιο χειμώνα και δροσερά καλοκαίρια.
ΝΤΕΜΠΙΝΑ
Η λευκή Ντεμπίνα, που μας προσφέρει οίνους ΠΟΠ Ζίτσα από το 1972, είναι όψιμη ποικιλία, πλήρως εγκλιματισμένη στο ιδιαίτερο οικοσύστημα της Ζίτσας, μετρίου σώματος, με δροσιστική οξύτητα, ενώ το αλκοόλ δεν είναι ποτέ έντονο. Χρησιμοποιείται κυρίως για την παραγωγή φινετσάτων λευκών οίνων. Η φρεσκάδα και το νεύρο της ποικιλίας είναι το βασικό της πλεονέκτημα, το οποίο εκφράζεται πιο έντονα στα αφρώδη κρασιά.
ΒΛΑΧΙΚΟ - ΜΠΕΚΑΡΙ
Το Βλάχικο δίνει κρασιά μετρίου βάθους, φωτεινά με πολύπλοκα αρώματα, που θυμίζουν μαύρα μούρα και γλυκά πιπέρια, μαλακές και διακριτικές ταννίνες ενώ πάντα υπάρχει μία σχετικά υψηλή οξύτητα στο στόμα.
Το Μπεκάρι έχει βαθύ χρώμα, μέτρια αρωματική ένταση, αλλά πυκνή δομή και έντονες ταννίνες στο στόμα.
Ο συνδυασμός των Βλάχικο και Μπεκάρι είναι επιτυχημένος και δίνει πληθώρα στυλ. Όχι μόνο ερυθρά κρασιά αλλά και ροζέ με μέτριο σώμα, αρώματα φράουλας και κόκκινου μούρου ενώ το στόμα είναι πάντα δροσερό και απαλό.
Ανάλογα με την οινοποίηση τα ερυθρά κρασιά με παραμονή στη δεξαμενή είναι ζωντανά, απαλά και φρουτώδη ενώ με ωρίμανση σε δρύινα βαρέλια είναι γεμάτα, ξεχωρίζουν από τον αρωματικό πλούτο και μπορούν να παλαιώνουν σε φιάλες
ΤΟ ΤΣΙΠΟΥΡΟ
Σημαντικό αμπελοοινικό προϊόν είναι και το τσίπουρο Ηπείρου, το οποίο έχει νομοθετηθεί ως Προστατευόμενης Γεωγραφικής Ένδειξης, καθώς έχει ιδιαίτερο χαρακτήρα με αρωματική ένταση αλλά μαλακό και στρογγυλό στόμα. Το παλαιωμένο απόσταγμα παλαιώνει περίπου 12 μήνες σε δρύινα βαρέλια και μπορεί να καταναλωθεί στο τέλος ενός δείπνου, αφού η παλαίωση στο βαρέλι του έχει χαρίσει μία προσωπικότητα που είναι πιο κοντά σε ένα μπράντι, παρά στο παραδοσιακό τσίπουρο - Ζίτσα

EPIRUS – the Apiros Chora (=infinite land) as was once known because of its size as well as for the magnificence of its landscape – present not only a rich history but also a tradition full of wine. At Zoinos Winery this tradition lively remains waiting for the wine lovers to consume the wine of Zitsa.
Historical sources state that Debina has been cultivated in Epirus since the 7th century until today. In the past it was used in spatial vinification while from the 20th century it is vinified with modern vinification methods. In the 16th century it established its reputation as a predominantly viticultural and wine-producing area. Many foreign travelers such as Lord Byron wrote enthusiastically about nature and its wines, as everybody used to make their own wine by fermenting in oak barrels the must –together with the grapes-producing a wine that didn’t differ much from the actual definition of an orange wine, using Zitsa’s unique grape variety: Debina.
After the second world war, in 1954, the region’s vine – growers decided to establish Zoinos winery, in order to rescue the wine region of Zitsa where the indigenous rare varieties are cultivated; the white Debina and the red Vlachiko and Bekari. They started with a small winery, in a time when the marks of war were still fresh, but the struggles, the efforts and the products of high quality led to the construction of a modern winery under the umbrella of Ioannina’s Union of Agricultural Cooperations in 1974.
In 2006 the winery separated from the Agricultural Union of Ioannina, creating Zoinos Winery, as we know it today. Since then, the company has run several investments in order to upgrade the winery facilities, established a new branch in the city of Ioannina and participates in viticultural research programs for the identification of the native varieties from Epirus, in cooperation with the Universities of Ioannina, Crete and the Institute of Wine.
New vineyards, 130 acres cultivated by Zoinos, planted with the indigenous varieties of Zitsa and at the same time, reviving some of the rarest indigenous varieties from Epirus, by producing wines rooted in an organic logic and representative of their terroirs.
ZOINOS WINERY‘s philosophy of producing first class, quality wine, is based on old-world craftsmanship, time honored traditions and modern, scientific practices. Only the finest, handpicked grapes are selected each year, together with a carefully honed selection from each & different village of Zitsa’s region.
Today Zoinos is considered one of the experts of the Debina variety, as they produce 3 different styles of Debina wines: sparkling, still and orange, and they are always in constant research of evolving them.
Key to the company’s success are the human resources, consisting of staff and partners with high scientific training, professional experience and special training skills, with which it maintains long-term working relationships.

Vineyards & climate conditions
The viticultural zone οf Zitsa includes 6 villages: Zitsa, Protopapa, Karitsa, Lygopsia, Gavrisi, and Klimatia. The altitude is 550 - 700 m, the soils are shallow limestone and are influenced by the breezes of the Ionian Sea that reaches the area from the passages carved by the river Kalamas. The vineyards are located in the meridional direction free from moisture in the summer and from the cold currents in the winter. The climate is characterized as Mediterranean with rainfall from October to April.
